Antonio is the team leader of BioInnovate Africa supported project that is using Orange-fleshed sweet potato (OFSP) puree to produce fried and bakery products. He is a gastronomist and food application process technologist. He is the proprietor of Euro Ingredients Limited, a company based in Nairobi, Kenya that develops innovative OFSP food products and processing equipment.
